Sweet and Tangy Goldenberry Salad Dressing Recipe
Goldenberry Salad Dressing Ingredients:
½ cup goldenberries, soaked in water to soften and drained
½ cup organic extra virgin olive oil
¼ cup raw organic honey
2 TBS apple cider vinegar
2 tsp dijon mustard
½ tsp Himalayan Salt
Additional spring water to desired consistency
Organic greens (romaine, spinach, or mixed greens)
Fresh organic strawberries, sliced
In advance, soak the goldenberries to make them soft, then drain the soak water or use it in a smoothie. Place soaked goldenberries, olive oil, apple cider vinegar, honey, mustard, and salt into a blender and blend until well combined. There will probably be some chunks of goldenberries that don’t combine and that is OK. Add spring water to reach desired consistency. Slice the strawberries and toss them in with mixed greens, then serve with the dressing.
